  • 2lb pork butt
  • 2 slices of Spam (optional)
  • American cheese
  • Pineapple Chutney:
  • 2 tablespoons vegetable oil
  • 1 teaspoon crushed red pepper flakes
  • 1 large sweet onion, minced
  • 4 inch piece fresh ginger root, peeled and minced
  • 1 large yellow bell pepper, diced
  • 1 small pineapple, peeled and diced
  • 1/2 cup brown sugar
  • 1 1/2 tablespoons curry powder
  • 1/2 cup apple cider vinegar
  • Salt and pepper


  1. Rub the pork butt with salt and pepper and place in a slow cooker on low for 16 hours on low
  2. The next day, remove pork butt from slow cooker and shred with forks
  3. Heat small pot on med-high and add oil. Saute red pepper flakes, onion, ginger, and bell pepper until soft
  4. add the rest of the ingredients and turn the pot to med-low heat
  5. Allow to cook, stirring occasionally, for 30 minutes
  6. Add mixture to a blender and blend until smooth
  7. If using Spam, heat a small pan and fry Spam slices in a small amount of oil until golden brown
  8. To assemble sandwich, stack cheese, Spam, pork, and chutney.
